Pan-Fried Tofu

Ingredients

Tofu (any amount really)
Vegetable oil (1-3 tablespoons; I start light and add as needed)
White pepper
Salt

Directions

1. Drain water from tofu and press out for 1 minute with paper towels
2. Cut into 1/2 inch thick pieces (5 widths, turn 90 degrees, half, flip to side and split, thirds -- hard to understand unless shown)
3. Use a non-stick pan
4. Put it on the eye and turn on medium-high heat for 30 seconds
5. Add oil for 1-2 minutes
6. Add pieces that should sizzle and leave for 6 minutes. Sprinkle white pepper and a little salt on them.
7. Turn them and leave for 4 minutes. Sprinkle white pepper on them again.
8. Put them on a paper towel-lined plate to soak up excess oil

Notes

I do shifts starting with step 6 - I set a timer for 4 minutes, turn the pan so they are sitting in the heat/oil, turn them over to that hot/oily side, and then add the next load in the other side. This takes about 2 minutes, so I set the timer to 4 minutes each time after that and keep the cycle going.

More oil tastes better, but less oil is healthier :)

I add a little sesame seed oil to the vegetable oil for flavor.
