Memere’s Corn & Rice Casserole

Ingredients

1/2 Bell Pepper, chopped
1 Onion, chopped
1 small jar of Pimento
Butter
Worcestershire Sauce to taste
2 cups cooked rice
2 cans Niblet corn (or 1 14.5-16 oz can sweet kernel corn)
1 can Cream of Mushroom Soup
Cheddar Cheese, grated

Directions

1. Sauté bell peppers and onion in butter.
2. Add pimento.
3. Mix with rice.
4. Add soup, Worcestershire, and seasonings to taste.
5. Bake at 350 degrees for 20 minutes.
6. Top with cheese and continue baking until cheese is melted.
