Ganny’s Chicken Salad
Ingredients
4 chicken breasts4 celery stalks (half for pot and half for fresh)
1 small white onion (half for pot and half for fresh)
4 tablespoons Durkee dressing
2 tablespoons mayonnaise
1 loaf Bunny bread
Salt & Pepper to taste
Directions
1. Simmer chicken, celery, and carrots until really tender (about 1 hour)2. Cool; remove any bones if needed; you won't use the stock veg for the recipe (save for soup, etc.)
3. Mince onion, celery, and a little chicken in a food processor (chicken keeps it from going mushy)
4. Mix the chicken/veg with the rest of the chicken in a bowl with a spoon
5. Put Durkee dressing, mayonnaise, and light salt/pepper in the middle of the chicken/veg mixture
6. Combine dressing/mayo/salt/pepper before combining with chicken/veg
7. Salt and pepper to taste
8. Tweak it at the end with Durkees so it tastes the way you want it to taste
9. Put on bunny bread
