Ganny’s Mac & Cheese

Ingredients

Brown rice noodles
Tillamook sharp cheese, block
Tillamook extra sharp cheese, block
Eggs
Onion, diced
Milk
Olive oil
Butter
Salt
Pepper

Directions

Grate sharp and extra sharp cheeses. Reserve half of the extra sharp cheese, and mix the remaining grated cheese together.

Cook noodles to al dente perfection. Reserve pasta water. Drain pasta, then put a bit of olive oil in your hands massage over noodles (to keep them from sticking to one another).

Preheat oven to 350°F / 177℃. Coat the baking dish with a light layer of butter. Layer noodles, then mixed cheeses (and repeat) to fill the container—ending with a lighter layer of cheese.

Separately, whisk eggs, milk, onion, salt, and pepper together. Lightly pour the mixture over the mac and cheese, allowing it to seep inward. Place the reserved extra sharp cheese atop the casserole and cover.

Bake until the edges begin to bubble (~30–45 minutes). Then set the oven to broil, remove the dish's cover, and allow the top to gently brown.
