Notes

Christie usually makes a half recipe. I measure and mix the flour, blended oatmeal (I put it in the little chopper and chop it until it is just barely coarse), salt, baking powder, and soda in a bowl on the side.

I use baking chocolate (unsweetened), and while I have grated it, I usually use the chopper to chop it into tiny pieces.

Always leave your butter out a few hours so that it will be softened when you start. I mix the two sugars together until you can't see any white sugar and you have removed any hard pieces in the brown sugar. Then add the softened butter and mix until you can't see any streaks of butter in the mixture. Mix the vanilla and egg in a small bowl and then add to the mixture and mix until it is smooth.

I always add the grated chocolate in first until it is all mixed in and then add the chips.

I like to put the dough in the refrigerator to get cold before and during baking.

You can make the cookies any size you want, but I usually make them small to fit in tins.

Bake them for 10 minutes. Watch the first batch and make sure you don't have to adjust the time. When you take them out, let them cool on the pan for a minute or two and then transfer to a wire rack to finish cooling. If you try to transfer them too early, they will be misshapen.
