Fontina, Basil & Bacon Grilled Cheese

Ingredients

Per Sandwich
Bacon, 2 slices
Fontina cheese, 2 ounces
Sandwich bread, 2 slices
Basil, to taste, fresh
Olive oil

Directions

PREP:
Arrange bacon on a rack over a foil-lined rimmed sheet pan and roast at 400˚ for about 20 minutes, then cool. Meanwhile, shred fontina cheese.
ASSEMBLE:
Over half of the bread, sprinkle half of the cheese. Break cooled bacon in half and place 4 halves on each slide. Top bacon with basil to taste. Sprinkle with remaining cheese.
Pour bacon fat from the pan into a small measuring cup and, if needed, add enough olive oil to equal 1/4 cup.
GRILL:
Brush 1 side of the remaining half of the bread with the oil mix, then place on cheese with the fat side up.
Place sandwiches fat side down on a large griddle. Brush top of each sandwich with remaining oil. Cook until crispy, 2-3 minutes per side.
