California Roll in a Bowl

Ingredients

2 cups sushi or short grain rice
3 tablespoons rice vinegar
1 tablespoon sugar
1 tablespoon kosher salt
1 avocado, sliced
1 carrot, julienned
1 cucumber, julienned
Sesame seeds
Crab meat (real or imitation)
Nori sheets, sliced

Directions

Prepare rice in rice cooker.

Combine the rice vinegar, sugar and salt in a small bowl and heat in the microwave for 30 to 45 seconds. Transfer rice to a large bowl and add vinegar mixture. Fold to thoroughly combined. Allow time to cool.

Serve in bowls and place toppings on top. Pour soy, mix and enjoy.

Notes

Originally recipe uses 2 tbs sugar and is from "Val so Cal" blog, 2011.
