Broccoli and Red Pepper Quesadilla

Ingredients

1 tbsp oil (for the veggies)
1 bunch broccoli (chopped into small florets)
1 medium Red Bell Pepper (sliced)
1 clove garlic
1 jalapeno (de-seeded & finely chopped)
2 tbsp taco seasoning
Cilantro – small handful (finely chopped)
4 tortillas
About 4 oz. Mexican blended cheese – 2 small handfuls per quesadilla

Directions

1. Chop the broccoli, RBP, garlic, jalapeno and heat a skillet (cast iron if you've got it)
2. Once hot, add 1 tbsp of oil and all the veggies. Saute for 5 minutes, continually stirring.
3. Add taco seasoning and continue to cook for 5 minutes
4. Chop cilantro, then add to skillet veggies as you turn off stove. Combine.
5. Use a skillet (with grill marks, to be fancy) on medium heat to make your quesadillas.

Mixture makes about 8 "small" tortilla quesadillas.
