Baked Ziti

Ingredients

1/2 lb. Ziti cooked al dente (8 minutes) and drained
1 Onion, chopped
1 lb. Italian Sausage (or opposum if available ;)
1 three lb. jar of sauce
8 oz. of Rocotta cheese
6 oz. Mozzarella cheese, shredded
2 tbsp. Parmesan cheese, grated

Preparation

Brown meat and onion. Add sauce and simmer 15 min. Heat oven to 350. Layer ingredients in square baking dish. 1 cup of sauce mixture at the bottom, then 1/2 the pasta. Layer the Ricotta (you can also layer some fresh spinach as an option). Add 1/2 of remaining sauce mixture, remaining pasta and the Mozzarella cheese. Top with remaining sauce and sprinkle with Parmesan cheese. Place dish in the oven on a cookie sheet. Bake for about 45 minutes (hot in the center and a little crispy on the edges.)

Serve with wine, crusty bread and salad.
