Turkey Corn Chili

Ingredients

01 T extra virgin olive oil
01 medium onion, chopped
01 large bell pepper (red or green), chopped
01 jalapeno, seeded and chopped
01 bay leaf (fresh or dried)
01.5 lb turkey meat, cooked
01 T chili powder
01 T ground cumin
01 – 02 t cayenne pepper sauce
01, 32 oz can chunky-style tomatoes
02 c prepared chicken stock
02 scallions, chopped
02 c corn kernels
coarse salt

Directions

Heat a deep post over medium high heat. Add oil to pot (01 turn of the pan), and add vegetables as you chop them.

Add bay leaf and cook vegetables 05 minutes, stirring frequently. Reduce heat if vegetables stick. Stir in diced turkey meat and season with chili powder, cumin, and cayenne.

Season with a little salt, to taste. Add corn, tomatoes, and stock. Combine chili well, adjust seasonings, reduce heat to medium-low, and simmer 07 – 10 minutes. Garnish with scallions.
